CHICKEN POT PIE-LESS

My favorite American comfort food deconstructed. Crescent rolls are superior to soggy pie crusts for soaking up the sauce.


INGREDIENTS:

  • 4 chicken thighs
  • 4 carrots
  • 3 potatoes
  • 3 garlic cloves
  • 1 shallot
  • 1 bay leaf
  • ¼ teaspoon oregano
  • salt & white pepper
  • ½ cup white wine
  • 1½ cup chicken broth
  • ¼ cup heavy cream

INSTRUCTIONS:

  1. Cut carrots and potatoes into 1 inch pieces.
  2. Pan fry the chicken until juices run clear (2-3 mins each side). Season with salt and pepper. Set aside.
  3. Cook diced garlic and shallots in olive oil until fragrant.
  4. Add wine to deglaze the pan.
  5. Add the chicken and juices to the pan.
  6. Simmer covered on low heat for 45 mins.
  7. Turn off heat. Add heavy cream and gently stir in.
